Most commonly, '30/20/10' refers to a whisking framework:

  • 30 seconds total whisking time to develop foam
  • 20 seconds of fast, vigorous zigzag motion to incorporate air
  • 10 slower finishing passes to settle and refine the foam

This is a practical guide, not a precise rule. The principle — start fast, finish slowly — holds regardless of exact timing.

Standard preparation ratios to use

  • Usucha (thin tea) — 1.5–2g matcha in 70–80ml water at 70–80°C
  • Koicha (thick tea) — 3–4g matcha in 30–40ml water, paste-like consistency
  • Matcha latte — 1.5–2g in 40–50ml hot water, topped with 150–200ml milk
