The Okumidori Cultivar: What It Is and Why It Matters

Not all ceremonial matcha is the same, even when it comes from the same region. One of the most significant quality variables is the cultivar: the specific variety of Camellia sinensis plant from which the tea was made. Okumidori is one of the most respected cultivars in Japanese matcha production, and understanding it helps explain why single-cultivar matcha carries a different level of specificity than blended products.

What a Cultivar Is

A cultivar is a cultivated variety of a plant, selected and propagated for specific characteristics. In tea, cultivars are developed and registered over decades. Japan's official cultivar registry includes hundreds of varieties, each with documented flavour profiles, growing characteristics, and suitability for different types of tea production. Some cultivars are bred for yield, others for flavour, others for resistance to climate conditions.

The cultivar affects virtually every aspect of the resulting tea: the colour of the leaf, the concentration of amino acids and catechins, the intensity of the flavour, and the way it expresses the terroir of the region where it grows.

Okumidori

Okumidori, which translates roughly as deep green, is a cultivar developed specifically for shade-growing and matcha production. It is known for producing leaves with high chlorophyll content, which gives the resulting matcha an exceptionally vivid, saturated green colour. The flavour profile is complex: rich umami, a pronounced sweetness with low astringency, and a long, clean finish.

Okumidori is considered a late-budding cultivar, which means it develops more slowly in spring than faster-growing varieties. This slower development produces a more concentrated leaf with a higher ratio of amino acids to catechins, and results in a cup that is smooth, layered, and distinctive.

Our Okumidori Ceremonial Matcha comes from Wazuka in Kyoto, a valley town whose hillside growing conditions, morning mists, and stable spring climate are particularly well suited to this cultivar. The combination of Okumidori's natural depth and Wazuka's terroir produces a matcha that is worth preparing with care and drinking without additions.

Single-cultivar matcha is a commitment to transparency. When the cultivar is specified, the producer is telling you exactly what was grown, where, and when. There is nowhere to hide behind blending.
