It is produced from later-harvest, unshaded leaves, ground to a fine powder, and sold at a price point that reflects its lower production cost. Prepared as a drink without sweetener or milk, it is bitter and astringent, which is why it is designed to be mixed with other things.

This is not bad product for its intended purpose. It simply is not ceremonial grade matcha, and using it as if it were produces a cup that gives people an inaccurate impression of what matcha actually tastes like.

What to Look for Wherever You Buy

Regardless of where you are shopping, the indicators of genuine ceremonial grade matcha are the same: a specified origin at the prefecture or town level, a named cultivar, a clear grade statement, the harvest season, and a harvest year. A price that reflects the cost of producing what the label claims, typically above €20 for 20g, is also a useful signal.
