The Chasen: Why the Matcha Whisk Is Worth Understanding

Of all the tools involved in matcha preparation, the chasen produces the most dramatic difference between those who use one and those who do not. A bamboo whisk used correctly creates the fine, stable foam that characterises well-prepared ceremonial matcha. Without it, the best matcha in the world produces a flat, uneven cup.

How It Works

A chasen is made from a single piece of bamboo, split into fine prongs at one end. The prongs flex as the chasen moves through the matcha and water, creating a rapid W or M motion that incorporates air into the liquid uniformly. The result is a foam that changes the texture of the drink significantly, making it lighter, more integrated, and more pleasant on the palate.

The number of prongs matters. A chasen with more prongs produces finer, more stable foam. A standard chasen for usucha has 80 prongs, which is sufficient for home preparation. Higher prong counts are available and produce marginally finer foam, but 80 is the standard for everyday use.

Care and Lifespan

Before first use, soak the prongs in warm water for a few minutes to soften them and increase flexibility. After each use, rinse immediately with warm water. Do not use soap, which can strip the natural oils from the bamboo and damage the prongs over time.

Allow the chasen to dry fully before storing. Storing it compressed, lying flat or crushed against other objects, will cause the prongs to lose their shape. The traditional way to store a chasen is upright on a small stand, which maintains the curve of the prongs. Without a stand, resting it upright in a cup is a reasonable alternative.

A well-cared-for chasen lasts several months with daily use. When the prongs begin to splinter or break, it is time to replace it.

We carry both dark and light bamboo chasen. The difference between the two is purely aesthetic. Both have 80 prongs and produce the same result in the cup. The dark version is made from smoked bamboo; the light from natural bamboo. Choose based on what suits your set-up.
