The Niigata Chazutsu: Why a Good Matcha Tin Matters
Matcha is hygroscopic. It absorbs moisture from the air, and even small amounts of moisture cause the powder to clump. Clumps that form before the matcha reaches the bowl are difficult to dissolve during whisking and produce a grainy, uneven cup. The chazutsu addresses this problem directly, and it does so at two points in the preparation: storage and sifting.
What a Chazutsu Does
A chazutsu is a matcha sifter and storage canister combined. The inner chamber holds the matcha in an airtight environment that protects it from moisture and light. The sifting mechanism, a fine mesh or vibration system depending on the design, breaks up any clumps that have formed during storage before the matcha reaches the bowl.
Sifting matcha before whisking is not strictly necessary, but it makes a consistent difference to the texture of the final cup. Matcha that has been sifted whisks more easily, dissolves more uniformly, and produces a smoother foam. For anyone who prepares matcha regularly, it becomes a natural part of the ritual.
The Niigata Version
Our Niigata Chazutsu is made from stainless steel and uses a vibration mechanism to sift cleanly and precisely. It is produced in Niigata Prefecture, a region with a long tradition of metalworking and craftsmanship. The material is odourless and non-reactive, which means it does not affect the flavour of the matcha stored inside, and it is easy to clean.
The airtight seal keeps matcha fresh between uses. Combined with storage in a cool, dark location, it extends the useful life of an open tin significantly compared to leaving matcha in its original packaging once opened.
Practical Note
The chazutsu works best with a small amount of matcha at a time, transferred from the main storage tin as needed. Storing all your matcha in the chazutsu is fine if you use it regularly; if you use matcha infrequently, keeping the bulk of it in the original airtight tin and transferring small amounts to the chazutsu as needed preserves freshness better.
