The most common reaction from people tasting high-quality matcha for the first time: 'I did not expect it to taste like this.' Most arrive with a reference point formed by matcha-flavoured products — ice cream, lattes made with culinary powder. Good ceremonial matcha is a completely different experience.

The flavour of quality matcha

High-grade ceremonial matcha tastes smooth and rich, with a natural sweetness that needs no added sugar. There is a grassy, vegetal quality alongside a deep umami note that lingers. The texture plays a significant role — properly whisked matcha has fine foam and a creamy mouthfeel. The finish is long and pleasant.

What is umami and why does matcha have it?

Umami is the fifth taste — savoury depth. In matcha it comes from L-theanine, which accumulates during the shading period before harvest. The longer the shading and the younger the leaves, the more pronounced the umami and sweetness.

Why does some matcha taste bitter?

  • Low quality — older leaves, minimal shading, poor processing.
  • Water too hot — above 80°C draws out bitter compounds. Use 70–80°C.
  • Too much powder — 1–2g per serving, not more.
  • No sifting — clumps leave bitter undissolved pockets.

How does origin affect taste?

Yame matcha from Fukuoka is deep and rich, with strong umami. Wazuka from Kyoto is brighter, with more floral sweetness. These differences come from soil, climate, and cultivar — similar to how wine regions produce distinct character.

What to expect if you are new to matcha

If you have never had good ceremonial matcha, the first time can be surprising — more intense than tea, assertive, unlike anything in most people's routines. Most people who try quality matcha a few times find their palate adjusts quickly and the flavour becomes something they genuinely look forward to.
