# Why Does Matcha Sometimes Taste Bitter? Causes and Fixes

Bitter matcha is one of the most common complaints from first-time drinkers — and often the reason they do not try it again. In most cases the bitterness is completely fixable. It is almost never the nature of the drink; it is a preparation or quality issue.

## Cause 1: Water too hot

This is the most common cause. Boiling water (100°C) scalds matcha powder and draws out bitter tannins at a much higher rate than correct temperature. The ideal range is 70–80°C. If your kettle has no temperature control, boil it and let it rest for three to five minutes before using, or pour into a yuzamashi first.

## Cause 2: Low quality powder

Culinary grade or low-grade matcha contains older, more bitter leaves with lower L-theanine content. The sweetness and umami that balance bitterness in good matcha simply are not there. If you have been using cheap or unbranded matcha and finding it unpleasant, try a properly sourced ceremonial grade. The difference is immediate.

## Cause 3: Too much powder

More matcha does not mean better matcha. Using 3–4g when 1.5–2g is standard creates an overwhelmingly bitter, intense cup. Measure carefully.

## Cause 4: Poor whisking

Clumped, poorly dissolved matcha leaves bitter pockets in the cup. Sift the powder through a fine-mesh sieve before whisking. Whisk in a fast zigzag (not circular) motion until a fine foam develops. This ensures even dissolution.

## Cause 5: Old or oxidised matcha

Matcha open for months or stored poorly loses its sweetness and develops a flat, bitter taste. Colour shifts from bright green toward yellowish. Fresh matcha in a sealed, opaque container tastes very different.

## The quick test

Change one variable at a time: lower the water temperature first, then check powder quantity, then assess matcha quality. Most bitterness problems resolve with the first or second adjustment.
